New and exciting gourmands

Search trends mirror what fragrance buyers are seeing behind the scenes: Across both Google and TikTok, searches for caramel perfume, gourmand fragrances, and vanilla scents have grown significantly over the past 12 months, according to Spate, the trend-forecasting agency, which predicts this positive growth will continue into the new year.

Perfumers, however, are cooking up new and exciting gourmands that go beyond traditional confectionery-inspired scents. Dubbed “neo” or “new” gourmands, these fragrances are still “edible” and delicious, but softer, more sophisticated, and more complex.

Upwards of half a billion dollars

For Gen Z, the point of perfume isn’t to make others swoon with desire. Spraying yourself with fragrance is a form of self-care, an opportunity to boost your mood. At least that’s Sol de Janeiro’s thesis.

And it appears to be the right one, given the brand’s explosive growth. This year, Sol de Janeiro became the top-selling brand at Sephora, displacing Rare Beauty, Selena Gomez’s viral makeup startup. It generates upwards of half a billion dollars in annual revenue.

The same speed as a mouse’s olfactory system

Sending people to check out disaster zones is always a risk, so what if a robot equipped with an electronic nose, or e-nose, could track down a hazard by “smelling” for it?

This concept motivated a recent study in Science Advances, in which researchers built an e-nose that can not only detect odors at the same speed as a mouse’s olfactory system, but also distinguish between odors by the specific patterns they produce over time when interacting with the e-nose’s sensor.
