And in a 2019 talk at the Museo d’Arte Contemporanea Roma, Larry Shiner, professor and author of Art Scents: Exploring the Aesthetics of Smell and the Olfactory Arts, told the audience he defines olfactory art broadly to include not just gallery and museum installations but also odor-enhanced theatrical and musical works, ambient scent design and—yes—incense and perfume.

Smell involves about 400 unique receptors. Each of the hundreds of thousands of scents we can detect is made of a mixture of different odor molecules. Each type of molecule may be detected by an array of receptors, creating a puzzle for the brain to solve each time the nose catches a whiff of something new.

Everything stops just for an instant

So, imagine a lacquered mahogany table on a balmy summer afternoon. A shaft of bright sunlight hits the table, warming the book-filled room it sits in, making the air heavy and resinous, almost as if someone is burning incense somewhere. A lavish bouquet of sprawling alabaster Easter lilies sits in an ornate vase on the table’s surface, pumping out their robust, silky fragrance. It’s creamy and complex, with a slight bite of ginger and a velvety touch of jasmine. You stop by the table, run your fingers over its smooth lacquer, and savour the warm, fragrant air. Everything stops just for an instant, and it’s beautiful.
