Recently, I re-watched El Bulli: Cooking in Progress, Gereon Wetzel’s very scrupulous, very German 2011 documentary about one of the final years at the restaurant many food followers believe to have been the most influential of the last two decades: elBulli, brainchild of rumpled Catalan genius Ferran Adrià. Besides falling in love again with both the mad scientist menu and Adrià’s right-hand man, dashing chef de cuisine Oriol Castro, the thing I really noticed on this viewing was how familiar the scenes might seem to our readers. Adrià and sommelier David Seijas discuss what families scents fall into and how to emphasize notes from individual ingredients with other ingredients. Adrià, Castro and Eduard Xatruch go to the market, and are frustrated by the variable qualities and availability of the raw materials they need. In the lab and kitchen, there are endless “mods”, sampling and editing sessions and passionate discussions about the time-lapsed impressions a product gives. Everyone sniffs, and then stares thoughtfully off into space.

Of course, if you’ve been following perfume in the news, none of this will be a surprise. Chefs and perfumers have long recognized their mutual interests. Cooks have used essentials oils in recipes since the thirteenth century, and medieval cuisine included dishes like ambergris pudding, rose and almond milk pottage, candied calamus root and marigold (calendula, or “pot marigold”) stew. Perfumers, meanwhile, have always sought to make their creations mouth-watering, and a few contemporary ones, like Christophe Laudamiel, started on the flavorings side of the trade. It certainly seems, though, that both fragrance and food industry spokespeople have recently become more vocal about publicizing collaborations, particularly on the luxury ends of the markets…

Top 10 Fall Fragrances 2013

I’ve experienced autumn in several places. When I was growing up in the ‘tropics’ (Virginia), the arrival of autumn was marvelous — no more steamy heat or mosquitoes. One of the first signs of autumn was the arrival of glass jugs of amber-colored fresh apple cider, for sale at orchard stands along almost every road. I tried to find an apple scent for this post (and for my perfume “collection”) in honor of apples and cool weather, but I was unsuccessful. Any suggestions? (Donna Karan DKNY scents need not apply.)

My early college life in New York City proved the Big Apple was not much different from Virginia in summertime, except for the added smells of simmering garbage on the streets. But autumn in New York was great; all the food cart aromas, even the exhaust fumes, smelled nicer mixing with the cool, marine air surrounding Manhattan, and the autumn leaves in Central Park added a dry, “woodland,” hay-like scent to the crisp air.

When I lived in L.A., autumn was pretty much like any other season (warm and sunny), except for days when the ferocious Santa Ana winds made autumn feel like I was standing in front of an open oven door…and the oven temperature was at 450° Fahrenheit. I’ve never in my life been more lethargic than during hot weather in Southern California, nor have I reached for cooling Eaux de Cologne more, applying them morning, noon and night.

Now I live in the Pacific Northwest…

Parfum d’Empire Musc Tonkin ~ fragrance review

Parfum d’Empire is one of my favorite perfume houses, but on occasion, its references to warmongering dictators,1 brutal tiger hunts, and, now, a celebrated raw material from an endangered species, annoy me. I’ve written about musk and the musk deer before so I won’t repeat myself, but creating a perfume called Musc Tonkin, and taking that a step further and making the perfume a limited edition (which gives it the air of a “rare” commodity) strikes me as insensitive, especially right now as many wild animals around the world are in danger of being wiped out for their body parts: the elephants of Africa come to mind (please Marc-Antoine Corticchiato, don’t develop an “Ivory Tusk” perfume inspired by the Kingdom of Benin).

Rant over, I will say I’m always interested in smelling a Parfum d’Empire creation. Musc Tonkin2 goes on strong, with a fragrance reminiscent of leather scented with aromas that remind me of carnation-cloves/cinnamon and “hairy” musks (or should I say well-aged manure?) I grew up in a family of gardeners and I associate gardening with the scent of — chicken manure. Every February or March, my father and grandmother arranged to have a large quantity of fresh chicken manure delivered to the edge of a woods they owned. This manure was allowed to age before it was used in our garden. After a year spent in the sun, the rain, the heat and cold, the manure was ready to use around plants or to enrich the soil of flower and vegetable beds. The cured manure smelled sweet, not at all unpleasant…

Top 10 Summer Fragrances 2012

I am a summer person. My favorite thing about spring is that it’s almost summer, and my favorite thing about fall is that sometimes, the summer days linger on longer than expected. I have nothing good at all to say about winter. But we take turns writing the seasonal Top 10 posts for Now Smell This, and somehow it has worked out that I’ve only done the summer list twice, in 2005 and 2007. Either one of those lists1 would take me happily through a summer even now, all these years later, and truth be told, summer is when I wear the least perfume anyway.2 Many days, a light layer of scented lotion is enough fragrance for me, and there are many more days when (horrors!) I wear no fragrance at all.

For this year’s list, I’ve avoided repeats by emphasizing post-2007 fragrances. Most, but not all, of my choices are unisex, and I’ve included niche and mainstream and indie, cheap and not so cheap…
