Valentine's Day is coming up! Here are 3 chocolate truffle bars from Seattle Chocolate. You're My Hero ("...with crunchy toffee pieces and Pacific sea salt in dark chocolate to celebrate your heroes, both big and small. 5% of net profits go to Mary’s Place"), Like You Latte ("creamy milk chocolate truffle bar infused with decaf espresso and crunchy, sparkling demerara sugar") and Boldly Go ("dark chocolate bar enrobes a creamy milk chocolate truffle center with caramel flavor notes"). 70g each (yes, they're all the same size! not shown to scale!) for $4.75 at Seattle Chocolate.

Yes, I am hungry at the moment, why do you ask? From Ritual Chocolate's new-ish Mountain line, the Juniper Lavender 70% bar. "Inspired by the mountains and growers of Utah, this bar is a blend of lavender grown by Lavender Hill Farms in Eden, Utah and dried juniper berries. Both ingredients are finely ground into Ritual's Mid Mountain Blend giving a floral, aromatic finish that lingers on the tongue and conjures up the scent of a high mountain meadow." About $10, and do comment if you've tried one.

Just in time for the holidays, a new chocolate bar from Aftelier + Areté Fine Chocolate. (If you missed it, here is the Ginger Rose bar.) Violet-Raspberry 63% Maya Mountain Belize Dark Chocolate: "We worked again with renowned artisan perfumer Mandy Aftel to create this second collaboration bar. A magical pairing of our Belize Maya Mountain Chocolate and her 100% natural Violet and Raspberry Chef’s Essences." $15 at Aftelier.

Ah, a little something for snack time. Aftelier's new Ginger Rose chocolate bar in collaboration with Areté Fine Chocolate. "We collaborated with renowned artisan perfumer Mandy Aftel to create this special bar. A divine marriage of our Belize Maya Mountain Chocolate and her 100% natural Turkish Rose and Indonesian Ginger Chef’s Essences. We spent almost four months working together to get the balance just right, and if you’re a fan of ginger we think you’ll agree that this bar is as close to perfection as you could hope to get." $15 at Aftelier.

The chemicals that give some dark chocolates their smell

Scientists have sniffed out the chemicals that give some dark chocolates their smell.

The compounds that mingle to make the candy’s aroma include pleasant-smelling ones such as vanillin, which gives vanilla its smell, and flowery linalool. But other molecules produce smoky or vinegary odors and even one that smells like sweat, researchers report online May 8 in the Journal of Agricultural and Food Chemistry.
